1 tbsp almond butter
1 tbsp tahini
1 tbsp soy sauce
3 tbsp maple syrup
3 tbsp orange juice
1 tsp sriracha or chili paste
1/2 tbsp cornstarch + 3 tbsp water
Mix all ingredients together in a pot. Heat on medium heat, whisking so it becomes a smooth sauce. Remove it from the heat when it starts to thicken to avoid burning.
Roasted Veg and Tofu//
1 russet potato, peeled and chopped
1 medium carrot, peeled and chopped
1small zucchini, chopped
1 slice tofu, cubed
Bake in the oven at 400F for 25-30 minutes until cooked and crispy.
