Italian-Style Poutine With Home Fries

11- Preheat oven at 350 degrees. Oil a cookie sheet.

22- Finely dice the potatoes as though you were preparing them to make chips. Then, cut each slice in half.

33- In a bowl, mix two tablespoons of olive oil with the rosemary. Add potato pieces and mix well until the potatoes are completely covered.

44- Carefully lay out potatoes on the cookie sheet, making sure they don't overlap. Bake for about 10 to 15 minutes or until golden and crispy, flipping them about halfway through.

55- While the potatoes are baking, heat the spaghetti sauce. Chop the tofu into one-square-inch pieces. Add to sauce.

66- Place the fries in bowls and add the sauce over them.

7Makes four portions.


1- 8 medium-sized potatoes (or sufficient for four people)

2- Olive oil

3- 2 tablespoons of chopped fresh or dried rosemary

4- one block of 500gm or 1lb of tofu

5- one jar of spaghetti sauce or enough for four people
