Easy Vegan Pho Recipe

PHO INGREDIENTS:
4 cups water (bring to a boil)
1 chopped onion
1/2 cup shredded carrots
Sliced green onions
2 cups sliced mushrooms
3 ounces extra firm tofu, diced
Small thumb of ginger, minced
Garlic powder
1.5 Tbsp soy sauce (I used tamari, but if using coconut aminos, use 2 Tbsp)
1 square of ramen noodles
